This is the creamiest and not too spicy Shin Ramyun recipe you have to try if you aren’t a big fan of spicy food but want to eat naughty korean instant noodles sometimes. And Shin Ramyun happens to be VEGAN( I’m talking about the classic ShinRamyun)!
What is Shin Ramyun?
Shin Ramyun is a brand of instant noodle that is produced in South Korea and is so popular not only in South Korea but also here in Japan. It tastes spicy bacause it contains a lot of chilli but has umami that comes from soy sauce and shiitake which is a type of mushrooms known for having umami. It might be said that Japanese people are not good at spicy food unlike Chinese or Koreans, but it really depends. Some people are crazy about spicy food and they can eat Shin Ramyun as it is without milk or cheese to make it less spicy. However ordinary Japanese like me find it a bit too spicy for our liking, so adding cheese, milk and egg to adjust the spiciness is polular in Japan.
Is Shin Ramyun VEGAN?
Yes and no. Shin Ramyun sold in Japan doesn’t have any animal related ingredients in it but, Nongshim, the company produces Shin Ramyun, uses different ingredients in their products in differnt contries, for example, they use beef broth in Shin Rmyun sold in South Korea. Therefore, you really have to check the package if you are a vegan.
Here are the ingredients of Shin Ramyun in Japan
Soup powder
seasoning, salt, spices, sugar, soy sauce, yeast extract, pepper,garlic powder, miso, shiitake powder, onion flavoured powder, ginger extract.
Flakes
Dried vegetables, soybean, chilli flakes.
starch, MGS, lye water, thickner, emulsifier, favour enhancer, green tea extract, acidulant, niasin, vitaminB1, iron, vitaminB2, folic acid.
Ingredients you need for the creamiest Shin Ramen
For this recipe you will need
1 package of Shin Ramyun per person – obviously!
Soy milk – This is the most important ingredient to make your Shin Ramyun less spicy.
Tahini – Tahini makes the soup thicker and creamier.
Miso – The soup will be a bit bland because of soy milk and tahini added, so you want extra saltiness with miso which is salty but it doesn’t raise your blood pressure.
Some vegetables – Actually, you can add any vegetables you like. I usually go for mushroom like shiitake, shimeji sometimes enoki and leek or green onion.
The Creamiest Shin Ramyun Noodles(Vegan)
Equipment
- 1 pot
Ingredients
- 1 package Shin Ramen Noodles
- 350 mil Water
- 200 mil Soy Milk
- 1 tbsp Tahini
- 1 tsp Miso
- some chopped Mushroom any kind of mushroom is fine
- some chopped Leek or Green onion
Instructions
- In a bowl, whisk together miso, tahini and soy milk. Don't worry if miso and tahini are lumpy, they dissolve in soup at the end.
- Boil 350 mil of water in a pot, add mushroom, leek, noodles, seasoning powder and vegetable flakes and cook for 4 minutes then add miso mixture to the pot and cook more 30 seconds to 1 minuite
