Vegan Tofu Chocolate Mousse

I know you are thinking now that the mousse must be a soybean-like taste, but it is not! You wouldn’t taste soybean when you eat the mousse and is so chocolaty and good!

Ingredients You Will Need

Dark chocolate – Milk chocolate is not vegan, so if you want your mousse to be sweeter, put some sugar in the tofu mixture instead of using milk chocolate.

Silken tofu – It is very important to use “silken tofu” because it contains the most moisture among all types of tofu. The watery texture makes a mousse-like texture.

Tips for Making Vegan Tofu Chocolate Mousse

Do not press or drain your tofu

A lot of recipes that use tofu say you should press your tofu before using it. This is because most recipes require the tofu to be fried or baked. The moisture of tofu is very important in this mousse.

Make sure your tofu is not cold

If your tofu is cold, melted chocolate will be set as soon as they are mixed and you’ll end up with a tofu stracciatella.

Chill your mousse long enough

Your mousse needs to be set before you eat. Please chill your mousse for at least 3 hours but I recommend chilling it overnight to make the mousse set completely.

They can last for about 3 days in the fridge. Cover the mousse with cling film or put them in an airtight container to prevent them from drying in the fridge.

Can I use other types of tofu instead of silken tofu?

Yes, you can if you want to, but I don’t recommend using other types of tofu, because silken tofu is the most watery one. The mousse needs a lot of moisture to be soft even after being chilled.

I don’t like tofu. What to use instead of tofu?

If you don’t want to use tofu but want to keep your mousse still vegan, you can use vegan whipping cream in place of tofu. Although most vegan cream doesn’t have as much protein as tofu, you can make a mousse and keep it vegan too.

Vegan Tofu Chocolate Mousse

Equipment

  • 1 sauce pan for a double boiler
  • 1 bowl
  • 1 Food processor

Ingredients
  

  • 200 g Dark Chocolate chopped
  • 450 g Silken Tofu (room temperature)

Instructions
 

  • Put the silken tofu in a food processor and pulse it until smooth. Do not press or drain your tofu.
    Melt the chocolate in a double boiler or in a microwave. Once your chocolate has melted, pour the chocolate into the tofu and fold it until homogenized.
  • Divide the mousse between 4 pots or glasses. Chill them in the fridge for at least 3 hours, preferably overnight.
    To serve, sprinkle some shaved chocolate. Enjoy it!
